I usually cold email the theatre teacher, the show's director, or the artistic director for the theatre even in community theatre, if you're okay with lower payand briefly explain my experience and that I'm interested in playing for a show sometime.
I also usually attach a resume.
Depending on the area you're in, your talents are a high commodity, so sometimes you just have to put yourself out there a bit!

It's choir practice and one service a week.
The church is not large, but they prioritize good music paid section leaders in the choir.
Be careful though, many churches want to "adopt" their musicians into the church family, and so they look to hire people who are religious.
If that's not your thing, it might be best to be upfront about it.
However, I'm sure there are churches who don't mind either way, as long as you can play the music.
Cold calls aren't a bad idea, either - churches are always in need of subs.
I've gotten a few that way.
EDIT: and in my experience, if you're just subbing, religious beliefs haven't come up at all.
They just need someone who can play the hymns and give you a good prelude and postlude.
